October is coming to an end, a special month this year, during which we again opened our events to the public! A year of great fruitfulness and production is followed by a year of less or zero production. While the choice of the appropriate harvest season depends on the final use of the fruit, for the production of olive oil or edible olives. At Stavros Niarchos Park we collect olives from the olive trees and produce our own olive oil since 2017. The olives are harvested by hand using the traditional ‘scallops’ method to separate the fruit from the branches and special nets are laid under the trees. From there, they are stored in bags and transferred to the mill where they are processed until the oil is produced. Nutritional tips for the olive and its derivatives: Olive oil is the main exportable organic Greek product. Koroneiki is the most popular variety of olive grown in Greece, producing excellent quality olive oil. Olive oil from immature fruit has a high nutritional value and a characteristic rich aroma. Green olives are harvested while they are still unripe, while the olives that will be consumed as black are harvested in a later.
